Manchester Tart
Just over a week ago we had a terrible reminder to appreciate every day we get to spend with our children. We were also reminded of the strength and resilience of a community when they come together.
Manchester is our home town, the place we were brought up and This is the Place we have chosen to bring up our boys. When last week’s events happened, we were so proud of how our city and nation responded and I could only think of one thing I wanted to film on The Happy Weaner and that was MANCHESTER TART!
It reflects our city beautifully.
It’s got a hard exterior with the pastry casing,
It’s sweet on the inside with the custard filling,
And with lots of different fruits in the mix it represents the wonderfully diverse and welcoming nature of our beloved city,
MANCHESTER!
Recipe
1 Packet of Pre-Rolled Shortcrust Pastry
3 tbs Raspberry Jam
1 Sliced Banana (optional)
3 tbs Desiccated Coconut
300ml Double Cream
500g Readymade Custard
3 tbs Toasted Desiccated Coconut
Cherries or Raspberries to Decorate
Method
Preheat the oven to 200 C
Grease a cake tin with butter
Roll the shortcrust pastry into the tin
Line with baking paper and fill with baking beans
Prick the base with a fork and cook in the oven for 15-20mins
Remove the paper and beans and return to the oven for 5 mins or until the pastry is light brown
While the pastry is in the oven whisk the double cream into peaks and fold in the custard
Once cooled spread the jam over the base of the pastry
Layer with the sliced banana
Sprinkle with the desiccated coconut
Spoon on the custard mixture and dust with icing sugar to prevent a crust
Chill for a few hours then sprinkle over the toasted coconut and cherries
