Would you Christmas eve it… We’ve only gone and cooked a full Christmas dinner, with home made stuffing and everything!!! It’s a Christmas miracle!!!
The challenge
Cooking a Sunday roast is not my idea of fun, in fact it sends me into a cold sweat thinking about it! So when Lucy challenged me to cook a full Christmas dinner for The Happy Weaner I must have lost half a stone with the anxiety. So like any teacher would, I played magpie and looked at how all the chefs cook it and started putting pen to paper and planned it out, one ingredient and a time. Before I knew it the page was full of scribbles and drawings with labels.
As it was Christmas and magic was floating in the air, some must have dropped over the Happy Weaner kitchen because ….I DID IT!!!!!!
This can all be cooked in a hour!!!! Another Christmas miracle.
I’ll never look at a Sunday dinner in the same way….I can do this!!!!!!
*RECIPE for stuffing*
♡ Soften one onion in a LARGE knob of butter
♡ Add them to 80g breadcrumbs
♡ Add 1tbs sage and black pepper
♡ Add some oil if needed
♡ Cook at 180°C for 25 mins
*RECIPE for the turkey*
♡ Marinade 4 turkey breasts in 4tbs Greek yogurt
♡ Season with black pepper and mixed herbs
♡ Cover in foil and cook at 180°C for 30-45 mins
*RECIPE for pigs in blankets*
♡ Wrap sausages in bacon
♡ Cook at 180°C for 45 mins
*RECIPE for roast potatoes*
♡ Peel and slice 4 potatoes into 1cm slices
♡ Using a cookie cutter, cut into festive shapes
♡ Parboil for 5 mins whilst heating butter/oil on a baking tray
♡ Transfer onto the tray and cook at 180°C for 30-45 mins, turning once
*RECIPE for roasted veg*
♡ Cut 2 carrots and 2 parsnips into batons
♡ Half pre peeled brussel sprouts
♡ Drizzle in oil
♡ Roast at 180°C for 45 mins.
Now sit back, relax and pat yourself on the back.
