Potato Cakes

The once was a woman named Claire,

Who’s cupboards were terribly bare.

In just half an hour,

With eggs, spuds, milk and flour.

She whipped up some Boxty to share!

We’re feeling very green here at The Happy Weaner, with Irish grandparents on both Finley and Theo’s side of The Happy Weaner families, we thought we’d celebrate, with an old favourite, you guessed it, Boxty. Or for those of us out there without an Irish Nana to feed them to you the humble potato cake.

These were so easy to make and the boys just loved them, wolfing them down in seconds and leaving us nothing to enjoy with our Guinness/brew. They’d be ideal to take out with you as a snack, and the consistency is great for younger babies, easy for them to hold and minimum mess! Bonus!

So heat up that pan and grate those potatoes and enjoy an Irish treat with us  this St Patrick’s day.

*Boxty (Irish Potato Cakes) Recipe*

♡ 3 Medium Potatoes, peeled and halved.
♡ Mash half the potatoes
♡ Grate the other half, rinse and pat dry
♡ Cover the grated potato in 50g plain flour and 1 tsp baking power
♡ Mix 1 egg with 1/4 pint of milk and pour over the grated potato mix
♡ Add the mashed potato and stir well
♡ Season with black pepper
♡ Spoon the mixture into a hot buttered frying pan and cook each side until brown. Approx 5 mins each side.
